Your main course sounds delicious, although it is somewhat lacking in eye appeal, with an overabundance of orange and yellow. So yes, definitely add at least one green veggie!

Perhaps also consider trading the carrot salad for something green -- either a broccoli salad (Ruth's Prize-Winning recipe found on the Web), or a tossed green salad (perhaps with grape tomatoes) with a simple vinaigrette. With your existing menu, I'd lean much more towards the tossed green salad, to help balance out a menu that is heavy in starch and sugar as it is. Green beans, as you suggested, would be lovely for your hot veggie!

You certainly don't need appetizers, unless people will be drinking any sort of alcoholic beverage before-hand. Even so, the appetizer offered needn't be elaborate, by any means. A bowl of mixed nuts, or a dab of chive cream cheese smeared on celery sticks, with a sprinkle of paprika for colour, will certainly suffice before your Easter feast.

Your lavender cookies sound delightful, and so fitting for the Spring/Easter season! Peach crisp sounds lovely, too, although again you have two items that are a bit lacking in colour. You can remedy this somewhat by making Chocolate Covered Strawberries (they'd look really pretty on a silver tray, alongside the lavender cookies), and/or by considering a bit more colourful alternative to the Crisp, such as Strawberry Angel Food Dessert. If you serve cupcakes for dessert, I would suggest you consider Lemon, which works so well with Spring and Easter. To add colour, I would suggest you garnish the top of each with a single fresh raspberry, and perhaps a small mint leaf as well. Alternatively, a small cluster of fresh blueberries and raspberries (3-4 berries total) would be very pretty, too!
